Smokey Roasted Chickpeas

These roasted chickpeas with smoked paprika are the perfect quick & healthy snack!



Have you ever desperately craved a snack but didn't have anything left, it was late in the day already, you felt lazy and couldn't be bothered but you had a can of chickpeas left?

In that case, this is the recipe for you. If you love chickpeas and smoked paprika, these crispy roasted chickpeas are a must-try!

But let's for a moment contemplate about how awesome chickpeas (or garbanzo beans) are.



They are a great source of protein and fibre, are full of iron, calcium, carbohydrates, vitamin B-6, vitamin K, magnesium, zinc, just to mention a few vitamins and minerals. You can use them in (almost) anything, whether you make a cookie dough, hummus, buddha bowl or simply eat it as a snack.

Plus, they just taste great.



Even though I have a huuuuge sweet tooth, I've started to notice that if I eat too much sugar I feel low on energy and my stomach doesn't like it. This made me re-think how much sugar we should actually consume and how I can cut down on it. So, I had to think of yummy savoury snacks that I could make instead. I'm also trying to reduce my waste which means that store-bought snacks would be a very rare occasion because of the packaging. I thought about crisps alternatives. Roasted kale and chickpeas came into my mind and are my go-to snacks now.

So now you know how this all started and how I make my crunchy yummy scrummy badass roasted chickpea snacks.

Here's the very simple 3 ingredients recipe.

Smokey Roasted Chickpeas


The perfect snack for cosy movie nights, when you’re in a rush, or whenever you feel like roasted chickpeas. 3 Ingredients only, 1 oven, 15 minutes max. Are you ready?


Course: Snack, Side Dish

Servings: 1-2

Cuisine: Gluten-Free, Vegan

Does it keep? 2-3 Days,

Airtight Container

Prep Time: 5 min




Ingredients

1 can chickpeas

1tsp smoked paprika (or more if you want)

1/2 tsp salt

Optional: black pepper


Method

1. Preheat oven 170 degrees.

2. Open your can, drain your chickpeas and rinse with water.

3. Lay them out on a parchment sheet and sprinkle smoked

paprika and salt on top. Shake them a wee bit so that they are all evenly covered with paprika and salt. Alternatively, you can make this easier by putting the chickpeas in a bowl and sprinkle the paprika and salt on top, and shake them in there. Then, transfer them onto the parchment sheet.

4. Put them in the oven, and let them sit until they are golden. This takes roughly 7-10 minutes, depending on your oven. If you like them crispier, you can leave them longer in there, I personally never do because I like them crunchy on the outside but very soft inside.
